Bubble and Squeak

Bubble and Squeak is an Irish preparation of Cabbage and Potato. Traditionally it’s made for breakfast from the leftovers of a roast dinner. The name of this dish refers to the bubbling and squeaking sound it makes while cooking. It’s ideally made with streaky bacon but here I have used some chicken strips along with the regular cabbage and potatoes.  Always serve it hot with bread rolls. It’s very easy to make and is a very tempting quick dish for any occasion.


  • Big Potatoes – 750 grams.
  • Milk – 150 ml.
  • Butter – 50 grams.
  • Cabbage – 500 grams
  • Chicken strips cooked – few strips. Or Streaky Bacon – 4 slices.
  • Onion – 50 grams.
  • Salt and Pepper – to taste.


  1. Cut Potatoes roughly into cubes and boil till done. Drain and mash them.  Add milk and butter; incorporate well while potatoes are still hot. Season well with salt and pepper and set aside.
  2. Heat a large fry pan and stir fry the chicken pieces or cook the bacon until it is crispy. Scoop out and set aside.
  3. Add onions to the pan and sauté on low heat. Add Cabbage, stir occasionally while the cabbage wilts and browns.
  4. Add the potatoes and the cooked chicken or bacon mixing well with the cabbage and onions.
  5. Let the mixture cook in the pan undisturbed for 5-7 minutes to make the bottom crispy and brown. Occasionally flip large portions of the mixture over and brown the other side too. Take the pan off the heat and serve hot once the mixture is crispy on the outside yet creamy inside.
