Brownies and Blondies are like twin brothers sharing the same gustatory levels, with same shape and texture. Blondies are known as the blonde brownies. Unlike brownies, blondies are flavored with brown sugar instead of chocolate giving it a blonde color. If you want a low fuss dessert on your table, these blondies will stretch and play lavishly on your plates.
Blondies are rich, sweet and delicious anytime. Blondies are as trendy as the brownies slowly catching the attention of all. If you are looking for a brownie without chocolate, blondies are the best option to go for. But here I cannot leave my chocolate aside and added the chocolate chips. You can substitute them with walnuts or any nuts or add both of them.
They are baked almost the same as the brownies is also called ‘Congo Bars’. These can be cut into bars and goes very well with chocolate, butterscotch or maple syrups and ice-creams. The only care to be taken while preparing blondies is that to make sure the melted butter after adding the brown sugar is slightly cool before adding in the egg. The brown sugar with the butter should look a bit grainy. This is my favorite and perfect blondies recipe that is definitely a keeper. This recipe is adapted from the book “Carole Clemente- Home Baking” from my personal set of cookbook collections. I love reading cookbooks and reading an awesome cookbook is perfectly right for me before bedtime. It’s not only cookbooks but anything related to food and cooking distracts me and I start shifting my mind quickly towards it.
Chocolatey Walnut brownies have already made an appearance so I thought to add the Chocolate chip blondies on My Food Trolley. Like the brownies, Blondies can be made ahead and stored up to four days in an airtight container. This recipe gives 8 square bars.
Ingredients:-
- All-purpose flour- 1 level cup.
- Plain Salted butter- 8 Tablespoons.
- Natural brown sugar – 3/4 cup.(three- fourth)
- Egg – 1 no.
- Baking Powder – 1 teaspoon.
- Vanilla essence – 2 teaspoons.
- Chocolate chips – 1/2 cup. (Half).
Method:-
- Preheat your oven to 180 degrees Centigrade. Grease and flour dust your baking pan to keep aside.
- Melt butter on a very low heat in a pan and slowly add the coarsely powdered brown sugar to it. Combine both of them and allow it to cool slightly.
- Drop in the egg and add vanilla essence mixing well. Fold in the flour and baking powder together with the chocolate chips to form a thick batter.
- Quickly spread the batter to the greased pan and bake for 25- 35 minutes till well set. Allow it to cool in the pan and cut it into squares or bars.

Jinny, you can bake it in a microwave-convection oven but not in microwave solo oven. I use a micro-convection oven for baking.
