Easy Spice Cake

A good spice cake recipe is always a keeper and everybody will beg to eat it right way. The aroma of this scrumptious cake will make your mouth water; in short I’ll say the cake is too yummy to miss out. Spice cakes will make your kitchen go into a Christmassy mood. The recipe is fairly typical on its own with no particular method written down or any precise ingredients but was handed down by word of mouth. I will say this is a very rough recipe without any compilation or trials or errors; this recipe is again from my mother. Every time we ask her to bake a cake we get a Simple Spice cake. You may ice it or not, as you choose but this cake goes very well with your tea or coffee. This cake is good to be even served with custard.

Talking about spices the home made spice mix of cinnamon, cardamom, nutmeg and cloves delivers a wonderful flavor. This cake has a similar flavor of the Christmas cakes bought from local bakeries of my mother’s hometown, a taste of the true southern Indian traditional bakeries. The cake batter is heavy but after baking it becomes soft and light. It is moist too and finely textured; we also love to serve it while it’s still warm. You can bake it in a loaf pan and it will rise considerably to a breath taking height. I chose to bake it in my favorite deep seven inch cake pan. This beauty takes about forty five minutes giving out a sweet aroma of spices.

This was one of the seasonal festive cakes I baked this winter and the word ‘spices’ itself gives us the warmth of the season. I have also used rice bran oil like you might have seen in my other cake recipes. So without any more explanations, here’s the recipe and you can try and see it for yourself.

Ingredients:-

  1. All-purpose flour – 2 cups.
  2. Sugar (granulated) – 1 cup.
  3. Cloves- 4 nos.
  4. Cinnamon stick- 1 inch
  5. Cardamom- 3 nos.
  6. Nutmeg- half teaspoon (powdered)
  7. Rice bran Oil – 1 cup
  8. Eggs – 3 nos.
  9. Salt- half teaspoon.
  10. Baking Soda- half teaspoon.
  11. Baking powder- half teaspoon.
  12. Caramel food color (optional) – 1 teaspoon.
  13. Vanilla essence- 1 teaspoon.

Method:-

  • Sieve flour, salt, baking powder and soda and keep aside.
  • Ground the sugar into powder with cloves, cardamom, nutmeg and cinnamon. Keep aside.
  • Preheat the oven; Grease a baking pan with butter and flour dust the pan.
  • Beat the eggs well with oil and caramel color till frothy using an electric whisk.
  • Slowly add the powdered sugar with the spices to the egg mixture. Add vanilla essence.
  • Gently fold in spoonful of flour mix into the egg mixture at a time while mixing it well, until the entire flour is used up. Batter will be thick dropping consistency.
  • Pour the batter to the cake tin and bake at 180 degrees centigrade for almost 35-45 minutes in the middle rack of the oven or until a wooden skewer inserted in the center of the cake comes out clean.
  • Invert the cake onto a cooling rack. The cake keeps well for almost a week in an airtight container.
